Ingredients
- 1 cup blanched chana dal (Bengal gram)
- 2 tablespoon ghee
- 1/2 teaspoon fennel seeds powder
- 1 cup all-purpose flour (Maida)
- Salt and Cardamom powder according to the taste
- 1/2 teaspoon refined oil
- 1 cup powdered jaggery/ cane sugar
- 1 teaspoon powdered green cardamom
- 1 teaspoon nutmeg powder (optional)
- 1/4 teaspoon turmeric
- 1/4 cup water
Method
Here is the step-by-step guide that will help you prepare the Puran Poli effortlessly at home. Please read the steps carefully before you start making your dish. To begin with:
- Rinse the chana dal well in the water. Make sure to soak the chana dal in water for around 30 minutes to one hour and then drain it using freshwater.
- Take a pressure cooker, add half a teaspoon of ghee. Now, pour 1 cup of chana dal and add 2 cups of water. Pressure cook for 6 to 7 whistles for the dal to get softer and tender.
- While your dal cooks, make the dough for coverings. Take 2 cups of flour in a large container or bowl. You can also use all-purpose flour in case you don’t have wheat flour.
- Now, begin to make a soft dough by adding warm water in little quantities. Add a pinch of salt, 3 tablespoons of oil, and turmeric powder (optional). Knead well using your hands until the dough becomes soft and pliable. Cover the dough using a clean towel and let it rest for at least one hour.
- Now is the time to check whether the Dal is ready or not. Open the pressure cooker lid, put the dal in the container, and let it cool. - Take a medium-sized pan, put dry ginger powder, nutmeg powder (optional), cardamom powder, and fennel powder. Fry all the ingredients well on a low flame.
- Add the cooked chana dal mix with powder or grated jaggery. Keep on stirring till the mixture becomes completely dry. Your Puran mixture is cooked now. Allow the mixture to get cool at room temperature.
- Take a dough and start making medium balls from the same. Place the portion of Puran mixture accordingly in the center while joining the edges together.
- After joining every edge carefully, pinch them using fingertips and start rolling the dough like you make chapati.
- Take a heated tawa or griddle, spread some ghee, and place the Poli/dough directly on the Tawa.
- Turn over when one side gets browned. Repeat the process until the Poli is properly cooked.
- Apply the same technique using the dough which is left.
- Stack them in a casserole nicely wrapped with a kitchen napkin.
Your Puran Poli is ready to be served.
